Extrude honing and polishing aren't "competitors", per se, but rather complements of one another. It's not whether or not one is better than the other, but rather, the processes work together nicely. As you've stated, polishing is for removal of material where the tool can reach (such as the valves -- headwork). Extrude honing was designed to remove material where the tool cannot go (like the intake tract). If you talked to machine shops (and if you have the money), the experts will tell you it's best to have your heads polished AND extrude hone your plenum.
